This project leverages advanced Artificial Intelligence (AI), specifically Large Language Models (LLMs) enhanced with Retrieval-Augmented Generation (RAG), to strengthen monitoring and compliance within Preventative Control Plans in meat processing facilities. By integrating data from in-line sensors, offline analyses, textual descriptions, and visual sources, the LLM can identify and track critical control points, ensuring adherence to food safety standards. The project includes collaboration with deli meat processors and will use both historical and real-time data to train LLMs to monitor these points effectively, establish critical limits, and generate comprehensive reports validated against existing inspection records. Additionally, trend analysis performed by the LLM-RAG system will pinpoint opportunities for proactive improvements, minimizing compliance deviations.
